Coolant temp fluctuations

I've had this truck for 2 years now(06 CCSB 190K when purchased 240k now) my temp was always rock solid at 185 area. I just did the stats due to not heating up in time or whatever the code is. Either way new stats and now I'm fluctuating between 185 and 210. At idle I'm right at 195 area but mild load brings me up to 210 or a RCH under then a good romp brings me down to just over 185. I know these gauges are not supposed to be accurate and only a general idea of what's going on but from where I was last week and the previous 2 years to today??? I have seen threads about resivour cap, temp sensor, stats and everything is fine. Its acting out of the normal is what calls for my concern. Thanks boys.
